Spicy, Chunky Chili

I like my chili with beans, spice, and some veg. Also, I am new to this whole writing my recipes thing. So, bear with me!

2 Tbs olive oil
2 jalapeños, seeded and small-diced
1 green bell pepper, diced
1 onion, diced
4 cloves garlic, minced
1 can dark kidney beans, drained and rinsed
1 can light kidney beans, drained and rinsed
1 large can diced tomatoes
2 small cans tomato sauce
1 lb lean ground beef
1 can beer, whatever you have on hand
Spice blend to taste: start with 2 Tbs chili powder, 1 Tbs ground cumin, 1 tsp garlic powder, 1 tsp paprika, sprinkle of chipotle rub…I like mine pretty flavorful and end up adding a little more of this/that.
Sea salt
Freshly ground pepper

In a large stock pot on medium heat, sauté the onions and peppers in oil until soft. Add garlic and cook for a minute. Salt and pepper the veg. Brown the meat. Add the spices. Deglaze the pan with a can of beer and cook for a few minutes or until it begins to bubble. Add beans, tomatoes and tomato sauce. Let it come back to a bubble and turn down the heat to low. Simmer for 20 minutes to an hour. Enjoy!
